A blend of 56% Cabernet Sauvignon and 44% Shiraz, the 2015 The Peake Cabernet Shiraz has a deep garnet-purple color and a profound nose of baked cherries, blackberry coulis and blueberry compote with hints of cedar, violets, dark chocolate and a waft of wild thyme. Full-bodied, rich and opulent, it has a seductively complex and plushly textured palate, with tons of black fruit and spice layers, finishing long and perfumed. RP

The blend of the 2016 The Peake Cabernet Shiraz is 57% Cabernet Sauvignon and 43% Shiraz aged in 60% to 70% new French oak. It's a barrel selection and blend that is solid and rich, with grainy tannins at this youthful stage. Cassis, cherry, vanilla and cedar all come together synergistically to yield a rich, chewy red that should age well for more than a decade. RP

Hickinbotham's 2017 The Peake Cabernet Shiraz is a 60-40 blend of the varieties, aged in a healthy proportion of new French oak. As a barrel selection, it stands above the other wines in the lineup, being more complex and complete than either the Brooks Road Shiraz or the Trueman Cabernet. Cassis leads the way, rounded out by ripe cherries and joined by shadings of cedar and vanilla. It's full-bodied and concentrated in the mouth, rich, supple and almost creamy in texture and boasts a long, silky finish. RP
