The 2021 Tococo was produced with 85% Syrah and 15% Petite Sirah. It fermented in stone lagar, open pools, with full clusters and indigenous yeasts and matured in oak foudres for 18 months. It's very stony. It has a palate with austerity and grip, with the oak really integrated. It has a low 12.5% alcohol while it retained very good freshness and acidity (6.03 grams of tartaric acid per liter of wine). It's one of the finest bottlings of this wine, reflecting one of the finest vintages for Alcohuaz in general. RP
