Located at the Shiga Prefecture (滋賀県), Matsunotsukasa 松の司 is a regional leading sake brand which put a lot of efforts on cultivating rice with the highest quality. Since 2003, the brewery started to grow rice organically, a method that is used by less than 1% of sake producers, and also pioneered to adopt the concept of “terroir” to craft sakes in tiny quantity that reflect the unique characteristics of the soils of a single site.
On 16 Sep (Thu), Mr. Tadayuki Matsuse 松瀬忠幸, Owner and Managing Director of Matsuse Sake Brewery 松瀬酒造, will join us and share with us his philosophy on crafting sakes of true regionality with selected local ingredients, sake-specific rice grown nearby and water from the underflow of the Echigawa River, archiving the rich and distinctive Matsunotsukasa flavours.
