    Chocolate x Wine Pairing

Originally a real egg would have been painted red, but today we have chocolate eggs in myriad form. What wines match well with chocolate?

    Chocolate Dessert And Wine Pairing:

With any dessert and wine pairing, the first trick is to ensure that the wine is sweeter than the dessert. Italian Moscato would be at the less-sweet and more gently textured end of the spectrum, with Rutherglen Muscat at the opposite extreme.

With chocolate dessert, it gets trickier, as chocolate tends to coat the mouth, and thus accentuate tannins and dull acids. Plus, there are a few different kinds of chocolate! Here’s something to help get you started:

Dark chocolate mousse: PX sherry or a sweet Madeira

Milk chocolate and pistachio tart: Tawny port

White chocolate and raspberry cheesecake: Canadian Icewine or German Trockenbeerenauslese Riesling
