    Chateau Pape Clement


     
    Château Pape Clément is one of the oldest properties in Bordeaux. The vineyard was first planted in the 13th century by its founder Pope Clément V. Over 7 centuries, the same vineyard has withstood French Revolution and disasters and still standing.
     

     

     
    Located in Pessac, the vineyards of Château Pape Clément contain clay gravels dating back to the end of the Pliocene epoch and the Quaternary period. And all the Pape Clément red ages in the cellars for 18 months, in 70% new barrels. Its wines are celebrated for its superb array of aromatics, expressive and complex nose, and a clean, round and smooth attack on the palate.
     
     
    In this episode of «Confidences by Watson’s Wine #2», chef Samual LEE and head sommelier Maxime VERDIER at Shangri-La Paris has paired barbecued pork with honey, with Pape Clément Pessac-Leognan 2016.
